Veggie-Beef Burgers




Ingredients:

4 ounces mushrooms, rinsed and dried
1/2 cup parsley leaves, packed
1 clove garlic
1 large carrot, cut into 10 pieces
2 tablespoons low-sodium soy sauce
1 lb extra-lean ground beef


Instructions:

1. Prepare a medium-hot grill. In a food processor, process mushrooms, parsley, and garlic until finely chopped. Transfer to a large bowl. Process carrot with soy sauce and 1 Tbs. water until very finely chopped; scrape down sides of bowl a few times. Add carrot and beef to mushroom mixture. Mix until ingredients are well combined. Evenly divide mixture into sixths using a 1/2-cup measuring cup. Shape into 6 patties.

2. Grill 8 minutes per side (turn carefully), until cooked through and an instant-read meat thermometer reads 160 F.
