Turkey Shepherd's Pie




Ingredients:

1 packet instant mashed-potato granules, prepared with 1 percent milk and 1 Tbs. butter
1 tablespoon butter or margarine
1 medium onion, chopped
1 lb ground turkey
1/8 teaspoon salt
1/8 teaspoon pepper
1 cup water
1 and 1/5 ounces roasted-turkey gravy mix
10 ounces frozen mixed vegetables, thawed


Instructions:

Crunchy celery and carrot sticks would be appealing with this meal.

1. In 10 inch nonstick skillet prepare mashed potatoes; remove from skillet and keep warm.

2. Melt butter in skillet over medium heat. Add onion and cook 2 minutes. Stir in turkey, salt, and pepper and cook, stirring to break up large pieces, 3 to 4 minutes, until just cooked. In small bowl combine water and gravy mix. Stir into skillet and bring to a boil. Add mixed vegetables.

3. Reduce heat to medium-low and simmer, stirring occasionally, 3 minutes. Spoon mashed potatoes around edge of turkey and vegetables; heat through.
