SOUTHERN FRIED CHICKEN

 

 

INGREDIENTS:

 

2 2-1/2 pound chickens, cut into 8 pieces.

 

 

THE MARINADE:

 

2 cups milk or water

1 cup hot sauce

1 tsp paprika

1 tsp granulated garlic

1 tsp granulated onion

2 tsp salt

1/2 tsp black pepper

 

THE SEASONED FLOUR:

 

3  cups flour

1 T salt

1 tsp paprika

1 tsp granulated garlic

2 tsp granulated onion

1 tsp black pepper

1 tsp dry mustard

2 tsp dried thyme leaves

1 tsp ground cumin

1 tsp poultry seasoning

1 tsp ground sage

Oil for deep-frying

 

 

PREPARATION:

Rinse chicken, pat dry and place in a large glass baking dish.  In a bowl, mix marinade ingredients and pour over chicken.  Make sure each piece is coated well.  Cover with plastic and marinate in the refrigerator overnight.

Make chicken: 

Remove chicken from refrigerator and bring to room temp.  Heat several cups of oil in an electric deep fryer or a large, deep skillet until temperature reaches 325 degrees.  In a large bowl combine the flour and seasonings, mixing well.  Toss chicken, several pieces at a time, in the hot oil.  Cook until chicken floats to the top and is very crispy, about 12 to 15 minutes.  Place cooked chicken pieces on paper towel to drain.  Repeat until all the chicken is cooked.

 

Yield: 4-6 servings
