Perfect Pot Roast

Ingredients:

2 tablespoons vegetable oil
1 4-lbs center-cut beef brisket
4 large onions, peeled and sliced
1 and 1/2 cups ketchup
1 cup water
1 teaspoon salt

Instructions:

Heat oven to 350° F.
1. Heat the oil over a low flame in a large skillet. Add the beef and brown well on all sides.

2. Remove the brisket to a platter, then add the onions to the skillet. Sauté for at least 30 minutes, until they are very tender.

3. Add the ketchup and water to the skillet. Then place the brisket back in the pan. Cover, place the skillet in the oven, and cook for about 3 hours, until the brisket is tender. Slice the meat thin and serve it warm with potatoes or noodles.

To reheat this dish, put the pot roast into a covered pan and then warm it in the oven at 325° F. for about 20 to 30 minutes.
