ITALIAN TURKEY BURGER

 

 

INGREDIENTS:

 

1 egg

1 pound ground turkey

1/2 cup plain dry bread crumbs

3/4 cup (3 ounces) shredded mozzarella

3 tablespoons plus 1/4cup bottled light creamy-style Italian salad dressing

4 teaspoons grated onion (1 small)

1 teaspoon dried oregano

1 clove garlic, finely chopped

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons light mayonnaise

4 sandwich English muffins, toasted

4 arugula sprigs

4 pieces bottled roasted red pepper

 

 

PREPARATION:

 

1. Prepare outdoor grill or heat broiler.

2. Beat egg in bowl. Mix in turkey, crumbs, 1/2 cup mozzarella, 3 tablespoons dressing,     onion, oregano, garlic, salt and pepper. Shape /4 cup mixture into patty with 4'-inch     diameter, for total of 4.

3. Grill or broil 10 minutes, until internal temperature registers 165, turning over halfway     through. At 8 minutes, top with remaining mozzarella.

4. Mix mayo and remaining dressing. Spread on muffins. Make sandwiches with burger,     arugula and red peppers.
