BBQ Pork Fajitas



Ingredients:

Garlic-flavored cooking spray
1/2 lb pork tenderloin, .5-in. slices
1 red bell pepper, cut into thin strips
1 red onion, halved, thinly sliced
1/2 cup spicy fat-free barbecue sauce
1 tablespoon lime juice
8 fat-free flour tortillas, warmed
1 cup shredded romaine lettuce
1 cup diced tomato
1/2 cup chopped cilantro


Instructions:

1. Heat large nonstick skillet. Remove from heat. With spray, coat bottom. Add pork; cook 3 1/2 minutes, until barely pink at center. Remove.

2. Wipe skillet. Heat; with spray, coat skillet. Add pepper and onion; cook 5 minutes, until crisp-tender. Cut pork into 1/4-in.-wide strips. Add to skillet with sauce and lime juice; heat.

3. Place 2 flour tortillas on each plate. Spoon 1/3 cup pork mixture in center of each; top with 2 Tbsp each lettuce and tomato, 1 Tbsp cilantro. Roll up.

Makes 4 servings. Per serving: 338 calories, 20 g protein, 62 g carbohydrate, 2 g fat, 34 mg cholesterol, 652 mg sodium.
